Caramel Apple (by Lucy Pomme)
Ingedients
1 package (400 gram) caramels
1/4 cup milk
1 tablespoon butter or margarine
3 medium Granny Smith, Golden Delicious, and or Red Delicious apples, cut into bite size pieces
1/2 cup chopped peanuts or pecans
Method
Combine caramels, milk and butter in 1-quart microwave-safe measure or bowl. Microcook at HIGH (100%) 2 to 3-1/2 minutes. Pour mixture into 1-quart fondue pot. Serve, heated, with cut apples and skewers for dipping apples into fondue then into nuts.
Apple Oat Sesame Cookies (by Christine Apfel)
Ingredients
3/4 cup all-purpose flour
3/4 cup whole wheat flour
1/2 cup quick cooking oats
1/4 cup sesame seeds
1/4 cup sugar
1 teaspoon cinnamon
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon nutmeg
1/4 teaspoon salt
1 1/2 cups finely chopped Golden Delicious apples
1/2 cup honey
1/2 cup vegetable oil
1/3 cup milk
1 large egg
3/4 cup golden raisins (optional)
Method
1.) Heat oven to 375 degrees F. In large bowl, mix both flours, the oats, sesame seeds, sugar, cinnamon, baking powder, baking soda, nutmeg, and salt. Stir in apples.
2.) In small bowl, beat together honey, oil, milk, and egg; add to oat mixture and stir until combined. Fold in raisins, if desired. Drop by tablespoonfuls onto ungreased cookie sheets. Bake 10 to 12 minutes or until lightly browned. Transfer cookies to wire rack and cool.
Bistro Apple Pizza (by Jonathan Mela)
Ingredients
2 tsp. garlic, minced
2 Tbsp. olive oil
1 12-inch prepared pizza dough crust
2 cups fresh spinach, coarsely chopped
1 1/2 cups Red Delicious, Golden Delicious, or Granny Smith apples cored, peeled and thinly sliced (or chopped)
1 cup shredded low-fat, part skim Mozzarella cheese
1 cup crumbled Blue, Gargonzola or Roquefort cheese
1/2 cup shredded parmasan cheese
1 tsp. dried leaf oregano
Method
1.) For each pizza: Heat oven to 230 C. Saut and ecute; garlic in olive oil over medium heat for 1-2 minutes. Remove from heat.
2.) Brush olive oil blend onto pizza crust.
3.) Distribute spinach evenly onto crust.
4.) Sprinkle on apples.
5.) Blend mozzarella cheese, blue cheese and parmesan cheese. Distribute evenly over apples.
6.) Sprinkle on oregano. Bake for 12-15 minutes or until cheese boils and crust is brown.
Apple Puff Omelet (by Eduardo Maçã)
Ingredients
2 large apples, peeled, cored and thinly sliced
1/4 cup sweet butter or margarine
1/4 cup brown sugar
1 tsp. ground cinnamon
4 large eggs
1/4 cup sugar
1/4 tsp. cream of tartar
1 Tbsp. confectioners' sugar (optional)
Method
1.) Preheat oven to 450 degrees. Heat butter or margarine in a medium-size skillet and sautT the apples for 5 minutes over low heat. Mix together brown sugar and cinnamon. Sprinkle over apples. Toss and continue to sauté apples for about 10 minutes, until they caramelize. The mixture will be thick and syrupy. Spoon mixture into an 8X8-inch baking dish and keep hot in the oven.
2.) Separate eggs. Whisk yolks and the granulated sugar in a small bowl until fairly thick. In a large bowl, beat egg whites with cream of tartar until stiff and shiny. Fold into yolk mixture, a third at a time. Pour egg mixture over the apples and bake for 8-10 minutes. The omelet will be puffed and golden. Remove from the oven and sprinkle with confectioners' sugar. Serve immediately.
3.) Prep and cook time: 35-40 minutes
Apple-Raisin Flapjacks (by June Jabuka)
Ingredients
3 egg whites
1 cup nonfat milk
2 cups reduced fat buttermilk baking mix
1 medium Granny Smith apple, peeled, cored and coarsely chopped
1/2 cup raisins
1/2 teaspoon nutmeg
Method
1.) In large bowl whisk whites until foamy; whisk in milk, then stir in baking mix.
2.) Add remaining ingredients; mix just to blend.
3.) Heat griddle or heavy skillet over medium heat; coat with vegetable cooking spray.
4.) Portion batter onto griddle with 1/4-cup measure. Cook until nicely browned, turning once, about 3 minutes on each side. Serve hot with maple syrup or nonfat yogurt.
Golden Apple Dumplings (by Kimi Omena)
Ingredients
1 cup dried apricots
1 1/2 cups water
1/4 cup sugar
6 Golden Delicious apples, peeled and cored
Pastry for 2-crust 9-inch pie
Apricot Sauce (recipe follows)
Apricot Sauce
1 cup water and reserved apricot syrup
2 teaspoons cornstarch
3 tablespoons sugar
1 tablespoon lemon juice
1 tablespoon butter
Method
1.) In small saucepan, combine apricots and water; simmer 10 to 15 minutes. Add sugar and simmer 10 to 15 minutes longer or until apricots are tender. Drain, reserving syrup for Apricot Sauce. Cool apricots.
2.) Chop apricots and stuff into centers of apples. Roll pastry and cut to make six 7-inch squares, rerolling and using scraps if necessary.
3.) Heat oven to 375 deg. F. Stand one apple on each square, so filling is upright. Bring up corners of pastry to center of apple; moisten edges with water and carefully pinch and seal all seams. Roll back top corners slightly to expose filling. Prick pastry of apple dumplings several times with fork to vent steam.
4.) Place dumplings in shallow baking dish. Bake 35 to 40 minutes or until apples are tender and pastry is golden. Meanwhile, prepare Apricot Sauce. Serve warm with Apricot Sauce.
5.) Apricot Sauce: Add water to reserved apricot syrup to measure 1 cup. In small saucepan, blend cornstarch and sugar; add syrup mixture. Cook over medium heat until thickened and clear. Stir in lemon juice and butter. Makes about 1 cup.
Candied Apples (by Maria Æble)
Ingredients
15 apples
2 cups white sugar
1 cup light corn syrup
1 1/2 cups water
8 drops red food coloring
Method
1.) Lightly grease cookie sheets. Insert craft sticks into whole, stemmed apples.
2.) In a medium saucepan over medium-high heat, combine sugar, corn syrup and water. Heat to 300 to 310 degrees F (149 to 154 degrees C), or until a small amount of syrup dropped into cold water forms hard, brittle threads. Remove from heat and stir in food coloring.
3.) Holding apple by its stick, dip in syrup and remove and turn to coat evenly. Place on prepared sheets to harden.
